Lasagna for Friends

When I had Ainsley I had a C-Section and it was not fun. We had people bring us food and that was the best gift other then money which we used to buy food. So I am paying it forward. Making food for my friends and here is my recipe for excellent La La Lasanga! -Andrea

Meat Sauce Layer:

2 pounds italian sausage

1 pound ground beef

BROWN & drain off fat

add 1 large onion chopped

cook until onion starts to get clear

add 1 can diced tomatoes

1 can tomato sauce

1 can tomato paste

2 tbs italian seasoning

3 large garlic cloves chopped or pressed

1 tsp salt

1 tsp ground pepper

2 tbs red wine or 2 tbs red grape juice

1 tbs white sugar

Let all this cook on high for 20 minutes then let it simmer for another hour.

Cheese Layer:

16 oz Ricotta

16 oz Cottage Cheese

8 oz Cream Cheese room temp

STIR together until all combined

THEN ADD

1 cup shredded mozzerella

2 eggs

1 tbs fresh chopped basil or 1 tbs premade pesto

Stir until all of it is the same consistency

BUILD IT

repeat

ending with meat on top then add

2 cups mozzerella and ¼ cup parmasean cheese

before freezing you will need to add ½-3/4 cup water to each pan of lasagna this will help with baking.

Cover and freeze or put in fridge until you want to serve

This makes SIX-5×8 medium sized pans for me.

COOKING/PREP time: 1.5 hours

To prepare:

1. Turn on oven to 400 degrees f

2. Remove all packaging

3. Replace the Foil

4. Put in the oven and bake for 1 hour

5. Remove the foil

6. Bake for another 15 minutes until cheese is golden and yummy looking

7. Take out let set for 10 minutes

ENJOY! Great to serve with Salad, Green Beans and Garlic Bread!
